The heart and soul of Chimayo begins with our open exhibition kitchen featuring two large stone-fired ovens. We specialize in made-from-scratch Southwestern and Mediterranean cuisine. Our fresh salads, small plates, artisanal pizzas, fire-roasted steaks, seafood and our specialty dishes, are roasted at searing temperatures, a clean and simple technique that produces rich and bold flavor. Over at our beautiful and spacious 35-foot curved bar, sip on an expertly crafted seasonal craft cocktails created and served by our experienced bar team. Our community Chef's counter, curved designer booths, rollup garage doors, outdoor patio and restored historic interior offer a variety of unique dining experiences on Main Avenue, right in the heart of downtown Durango.

Join us at Chimayo this Fall to enjoy our special seasonal offerings! You’ll find signature dishes like the Acorn Squash Fondue, featuring a tres queso and mascarpone blend topped with leeks, cranberries and almonds, served in half of a roasted acorn squash. Yum! Other delicious options include our famous French Onion Soup, the rich and creamy Mushroom Truffle Fettuccine and the Warm Butternut Squash Salad with bacon, spiced pecans, dates and Cambozola blue cheese.

What’s more? Our talented bar team has rolled out a very exciting new cocktail menu, including Fall-inspired creations like the Irish Fig Manhattan, Holiday Spritz and Winter Berry Margarita. Other additions include the already very popular Barrel-Aged Old Fashioned and Chimayo Cosmo. The House Gin & Tonic, pictured to the right, puts a creative spin on the old classic- Aviation Gin is complemented with Italicus Bergamot Liqueur, lime and tonic, then topped with a house made grapefruit and Aperol foam for a sweet and tart treat!
